My Favorite Healthy Snack for the Fourth of July [PHOTO]
It’s got red in it. No blue or white according to my current recipe, but there’s no reason why you can’t add blueberries and yogurt if your diet allows. Either way, the base of this snack is STRAWBERRIES — the best fruit for July picnics, BBQs and lunches on a boat.
I came up with this while camping at the Sunbanks Rhythm and Blues Festival. It was a stroke of genius. It’s changed my life and I don’t know why everyone doesn’t do it. Get ready for my secret:
- Find as many big, ripe strawberries as your diet will allow.
- Hallow them out with a parring knife.
- Scoop peanut butter inside!
- Top with a blueberry and dip in yogurt (if desired).
That’s it! Anybody can do it. It’s easy on a boat, or at a campsite or even in the car on your road trip.
